The mission of Master Chef Varda Avetisyan is to fuse traditional Armenian cuisine with new ingredients and approaches. After working abroad for fifteen years in the hospitality sector, Avetisyan returned to Armenia and in 2016 established the Kchuch restaurant in Dilijan.

Kchuch in Armenian means clay pot, which means that the restaurant prepares everything in clay pots in traditional red brick ovens. Master Chef Avetisyan will share with you her intimate knowledge of the region's food traditions, and how she loves to create new dishes using local organic ingredients that are not only characteristic of Tavush, but more specifically of Dilijan. Through these innovative approaches, restaurants such as Kchuch are offering many distinctive dishes and flavors for new culinary pleasures.

Guests will also have the opportunity, under the guidance of Master Chef Avetisyan, to select from local ingredients and to create their own kchuch dish. Cooking with a kchuch may be very traditional, but the food served here is . . . something special.

Weekends 10 a.m. start (lunch)

Weekdays 10 a.m. or 3:30 p.m. start (lunch or early dinner)

Lunch or dinner includes: Appetizers, salads, coffee, tea, gata, and the main dish.

Prices per main dish:

Tolma with sundried tomatoes and herbs OR Tolma with local mushrooms and emmer wheat

Tolma with lamb, rice and fresh mint

Chef Avetisyan mixes fresh local ingredients to make a filling.
